We migrate our beehives to Thyme farm during October and November. Bees collect nectar from Thyme flowers and make dark, thick, and slightly bitter honey.
It’s the darkest honey harvested by us in our region and research says that dark honey is healthier than light honey.
Thyme honey isn’t appreciated by kids because of its bitterness in taste, but it has the highest antioxidant properties. Thyme honey has more fructose compared to other types of honey. So, it will take more time to get crystallized.
